Okay, I think I have found the right place to ask this question!
I'm originally from Maine and I miss being able to buy a fresh lobstah. Here in NC we have these awesome spiney lobsters, but of course the fishery for them is tooootaly different. My question is this... Is there anyplace that I can purchase a fresh (living) spiney lobster, bring it home and cook it myself?
I have found the small frozen tails in some places and I tried them. They were good but I would love to be able to buy some fresh. It would be a really special way to put on a serious gourmet meal for them Northern visitors that we get fairly often!

| I know of no place that sells live Florida lobster, bugs, spiney's. You can catch them some times on a hook 30 + miles out. If you Scuba you can find them in many places FPT being one of the best locations. They are usually very big around here. I have seen some 8 + lber's from the FPT area. I hit FL keys every June for the sportsman season and always limit out with 24 per boat. But down there its hard to find them legal size 4" carpus. Capt Jon is a bug fan. |

| I may be wrong but seems like I saw some in a Harris Teeter store in Wilmington. I have no idea what kind they were though. |

Okay, how about this.... Maybe I and one other angler could come aboard some experienced diver's boat, us anglers pay for the gas plus some extra for whatever is needed, and we could all share the day's catch. Hairy Tit only has Maine bugs, no locals.....
Where are you at?
I sell my bugs ( live ) to Haag & Sons seafood on Oak Island. They are spineys that are still live when I unload them. You have to have a Fed license to sell them to a fish house, which I do.
He doesn't tank them but he does pack them directly in ice.
Don't know if that is of interest but I usually sell every trip we dive if the Mrs isn't craving a bug.
The bug in the pic will feed 8 - 10 people.........
If you want one, let me know and I will tell you what days we are going so you can buy one from John.

$ 6 - $8 per pound whole is the going rate.
As for the one in the pic, it was 13 lbs and fed 10 people......
The most common size I get us usually between 5 and 10 lbs......

Okay, I finally made it down to Haag & Sons last weekend and bought two HUGE spiney lobster tails. They are about 2.5 pounds each and were caught just a week before I bought them. One of you guys probably caught them, I assume!
Today is my birthday and so my birthday present to myself are these plus the hogfish that I had them fillet for me (I bought the whole fish!). So I am cooking up one of the lobsters today for my family of 4. I have prepared it by flattening it out and poking a couple chopsticks through it to keep it from curling. Then I cut away the bottom skin by cutting through the spines with meat scissors. I scored the meat into 1 inch thick chunks cut diagonally and down the middle too. I'll baste it with a spiced butter concoction and bake/broil it right in the shell upside down at 425 for maybe 12 minutes. Important to keep basting it in more of the spiced butter and its own juices. Meanwhile I will make some Thai rice and a nice hot Thai green curry, or maybe the sweeter and milder yellow curry. You will ruin a lobster when you boil it.
Best thing to do is steam it, it will come out VERY moist.
As far as getting it fresh from Haag.......... your welcome....
I was going to go shooting some more hogs in a few hours from what I am posting now but the waves aren't looking so good on the average period... *
Guess I get to sleep in for one more morning, worried about the vis with all the big swells we have had in the last week. I bet the bottom will be soup. _________________ Craig

I tried steaming a spiny lobster like we do to Maine lobsters and it's just not right. You have to get to know each type of fish and cook it the way that works best for it. Spiny lobster and cold water lobster are just not the same.
We wound up cooking it for more like 20 to 25 minutes. It was really great! Next time I will try cooking it differently - I'm going to cut the meat out into scallop size chunks and sautee it for just a short blast. That should keep it tender yet crisp.
